Pudding recipe

Ingredients

For the dough

  • Flour – 250 g
  • Powdered sugar – 60 g
  • Butter – 125 g
  • Egg yolks – 3 pcs

For the pudding

  • Egg yolks – 2 pcs
  • Milk – 200 ml
  • Butter – 25 g
  • Vanilla sugar – 15 g
  • Flour – 1 tbsp
  • Potato starch – 1 tbsp

Preparation Steps

Preparing the dough:

  • Separate the egg yolks from the whites (save the whites for other recipes).
  • Combine flour, powdered sugar, butter, and yolks in a bowl.
  • Knead the dough by hand until smooth.
  • Divide the dough into two equal parts, wrap in cling film, and refrigerate.

Making the pudding:

  • In a separate bowl, mix 1/3 of the milk, flour, starch, and egg yolks until smooth.
  • In a small saucepan, bring the remaining 2/3 of the milk with vanilla sugar to a boil.
  • Gradually add the prepared flour and yolk mixture to the hot milk, stirring constantly.
  • Add butter and continue stirring over low heat until the pudding thickens.
  • Remove the pudding from heat and let it cool.

Forming the pastries:

  • Take the chilled dough out of the refrigerator.
  • Roll out the first portion of dough and cut out circles for the bases.
  • Place the dough into tartlet molds, forming the base.
  • Fill each mold with a spoonful of pudding.
  • Roll out the second portion of dough and cover the pastries, sealing the edges carefully.

Baking:

  • Preheat the oven to 180°C (356°F).
  • Place the pastries in the oven and bake for 25 minutes until golden brown.
  • Allow the pastries to cool completely before removing them from the molds to prevent crumbling.
